Arugula
Gets White House Blessing

Obama planted an organic garden on the White House lawn. That's a
pretty
powerful statement
in and of itself, but
NOW
listen to what she said about eating healthfully:
"You can begin in your own cupboard by eliminating processed food,
trying
to cook a meal a little more often, trying to incorporate more fruits
and
vegetables."
I don't pretend to understand the wacky world of politics, wars,
economics, and
industry, but I do know that this simple statement made by the first
lady is POWERFUL!
I rarely watch the news, and I don't take sides in politics, but I'm
going to
watch this to see what happens when there are organic veggies sprouting
from
the White House lawn.
I lived in D.C. briefly when I was 20 years old. There were always bums
and
grumpy protestors gathered outside the White House complaining about
their
lives while not actually doing anything except spreading negative vibes.
Maybe now, the guards will give them some organic carrots to munch on
(believe
me, they could use some beta carotene).
The word on the street is that Mr. President vetoed beets (doesn't like
them),
but arugula got unanimously approved by the house. Arugula (aka rocket)
is a
killer, mineral-dense dark green with a peppery-spicy flavor.
Here's a quick salad recipe my wife makes:
ARUGULA SALAD
– 1 large bunch arugula (approx. 1/2 lb.)
– 2 large vine tomatoes
– 1 apple
– handful of raisins
– 2 tbls. ground flaxseeds
– 1/4 cup olive oil
– 1/4 cup balsamic vinegar
– 1/2 tsp. sea salt
– 1 lime
DIRECTIONS: Wash the
arugula
carefully, but don't cut it up or anything – keep the leaves whole. Cut
the
tomatoes and apple into big chunks. Toss with oil, salt, and vinegar.
Squeeze lime juice all over and sprinkle with flaxseeds just before
serving.
Enjoy.
